Ingredients
  

Vegetables

  • 3 pieces Tomatoes, diced
  • 1 piece Cucumber, diced optional, depending on your preference

Herbs

  • ½ tablespoon Parsley, chopped

Dressing

  • 2 tablespoons Tahini
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice

Seasoning

  • Salt and pepper to taste

Instructions
 

  • Step 1: Prepare the Vegetables. Wash the tomatoes and cucumber thoroughly. Dice the tomatoes and cucumber, placing them in a large mixing bowl.
  • Step 2: Chop the Parsley. Finely chop the parsley and sprinkle it over the diced vegetables in the bowl.
  • Step 3: Make the Tahini Dressing. In a small bowl, combine tahini, olive oil, lemon juice, salt, and pepper. Whisk until smooth.
  • Step 4: Combine Everything Together. Pour the tahini dressing over the vegetables and gently toss until well coated.
  • Step 5: Serve & Enjoy. Serve immediately or let it sit for 10-15 minutes for better flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For maximum freshness, keep the dressing separate until serving.
