Rinse before cooking.

Instructions
Step 1: Rinse the uncooked quinoa in a fine-mesh strainer under cold water.
Step 2: In a medium saucepan, combine the rinsed quinoa, water, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes.
Step 3: Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
Step 4: While quinoa is cooking, drain and rinse black beans under cold water.
Step 5: In a large mixing bowl, combine fluffed quinoa, black beans, lime juice, and parsley. Mix gently.
Step 6: Taste and adjust seasoning if necessary. Add chili powder for spice if desired.
Step 7: Serve warm or at room temperature, garnished with additional parsley or lime wedges.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
