- 4 cups pecan halves
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup corn syrup
- 3/4 cup sweetened condensed milk
- 1/2 teaspoon fine sea salt
- 8 ounces dark chocolate roughly chopped
- Flaky sea salt for sprinkling (optional)
Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them for about 8-10 minutes, stirring halfway through.
In a medium saucepan, melt the unsalted butter over medium heat. Add the granulated sugar, corn syrup, and sweetened condensed milk. Stir continuously until boiling, then reduce heat and simmer for 5-7 minutes.
On the lined baking sheet, place clusters of 3-4 toasted pecan halves. Drizzle about a tablespoon of caramel over each cluster and let it set for 10-15 minutes.
Melt the dark chocolate using a double boiler or microwave. Ensure it's smooth before proceeding.
Drizzle the melted chocolate over each caramel-pecan cluster, covering them generously. Sprinkle flaky sea salt on top before it hardens.
Let the turtles set completely at room temperature or refrigerate for about 30 minutes.
- Store in an airtight container at room temperature for up to 1 week.
- Freeze them for up to 3 months, separated by parchment paper.
- Use dairy-free options for a vegan version.
