- 1 tablespoon mayonnaise
- 1 tablespoon yogurt
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice
- 1/2 teaspoon chopped dill
- 1/2 teaspoon chopped parsley
- 8 ounces pickle spears
- 1/2 cup panko breadcrumbs
- 1/3 cup flour
- 1 tablespoon grated Parmesan
- 1 large egg
- Vegetable oil for frying
- Chopped parsley for garnish
In a small bowl, combine 1 tablespoon of mayonnaise, 1 tablespoon of yogurt, 1/2 teaspoon of garlic powder, 1 teaspoon of lemon juice, 1/2 teaspoon of chopped dill, and 1/2 teaspoon of chopped parsley. Mix well and set aside.
In one bowl, add 1/3 cup of flour. In a second bowl, beat 1 large egg until well-mixed. In a third bowl, combine 1/2 cup of panko breadcrumbs and 1 tablespoon of grated Parmesan.
Take each pickle spear and dip it into the flour, then into the beaten egg, and finally roll it in the panko breadcrumb mixture to coat evenly.
In a deep fryer or heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Ensure enough oil to fully submerge the pickles.
Carefully add a few coated pickles into the hot oil and fry for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Arrange the fried pickles on a serving platter, garnish with chopped parsley, and serve with the prepared dipping sauce.
- For a gluten-free option, use gluten-free flour and panko.
- Ensure the oil is hot enough to avoid soggy pickles.
- You can use whole pickles cut into spears if needed.
