This Easy Black Bean Dip is creamy, flavorful, and packed with protein, making it an excellent choice for parties, game nights, or a quick snack at home.
Step 1: Soak the black beans overnight in plenty of water. Drain and rinse, then cook in a pressure cooker with enough water for about 20 minutes until tender. Allow to cool before blending.
Step 2: Finely chop the red onion and garlic. If using fresh cilantro and green chile, chop those as well.
Step 3: In a food processor, combine the cooked black beans, chopped onion, garlic, lemon juice, chili powder, cilantro, green chile, cumin, black pepper, and salt. Blend until smooth, adding water as needed for desired consistency.
Step 4: Taste and adjust seasoning if necessary, adding more salt, lemon juice, or spices to suit your taste.
Step 5: Transfer the dip to a serving bowl and enjoy with chips, veggies, or as a spread. Optionally drizzle with olive oil and garnish with cilantro.
