  • 1 cup black beans soaked overnight and cooked
  • ¼ cup red onion finely chopped
  • 2 cloves garlic finely chopped
  • 3 tablespoons lemon juice
  • 1 teaspoon chili powder
  • 1 tablespoon cilantro fresh, frozen, or dried
  • 1 piece green chile either red or green, chopped
  • 2 teaspoons ground cumin
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 tablespoon water add more if needed

Instructions
 

  • Step 1: Soak the black beans overnight in plenty of water. Drain and rinse, then cook in a pressure cooker with enough water for about 20 minutes until tender. Allow to cool before blending.
  • Step 2: Finely chop the red onion and garlic. If using fresh cilantro and green chile, chop those as well.
  • Step 3: In a food processor, combine the cooked black beans, chopped onion, garlic, lemon juice, chili powder, cilantro, green chile, cumin, black pepper, and salt. Blend until smooth, adding water as needed for desired consistency.
  • Step 4: Taste and adjust seasoning if necessary, adding more salt, lemon juice, or spices to suit your taste.
  • Step 5: Transfer the dip to a serving bowl and enjoy with chips, veggies, or as a spread. Optionally drizzle with olive oil and garnish with cilantro.

Notes

For best flavor, chill the dip in the refrigerator for at least an hour before serving. Adjust spice level by varying the amount of green chile.
