For the Brownies:
- 1/4 cup butter (melted and cooled)
- 1/3 cup plain Greek yogurt
- 1/2 cup split red lentil puree
- 3/4 cup unsweetened cocoa powder
- 2 cups sugar
- 3 large eggs
- 1 cup white whole wheat flour
- 1 tsp salt
- 1 tsp vanilla extract
- 1 cup chocolate chips
- 1 cup chopped nuts (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Grease your baking pan lightly or line it with parchment paper.
Step 3: In a large mixing bowl, whisk together melted butter, Greek yogurt, red lentil puree, and vanilla extract until smooth.
Step 4: Add sugar and eggs to the wet mixture, whisk until well combined and creamy.
Step 5: In a medium bowl, sift together cocoa powder, flour, and salt.
Step 6: Gradually fold dry ingredients into wet mixture using a spatula.
Step 7: Stir in chocolate chips and chopped nuts, if desired.
Step 8: Pour batter into the prepared pan and bake for 25-30 minutes.
Step 9: Let cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
- For a vegan version, substitute butter with coconut oil.
- These brownies can be frozen for longer storage; wrap slices in foil.
- Add a swirl of peanut butter on top before baking for extra flavor.
