  • 2 cups water
  • 1 cup long-grain white rice
  • 1/4 teaspoon salt
  • 4 cups milk whole, 2%, or non-dairy
  • 2/3 cup granulated sugar
  • 1 1/4 teaspoons vanilla extract
  • Ground cinnamon for garnish

Steps:

  • Step 1: Rinse the Rice - Start by rinsing the long-grain white rice under cold water. This removes excess starch and prevents the rice from becoming too sticky.
  • Step 2: Cook the Rice - In a medium saucepan, bring 2 cups of water to a boil. Once boiling, add the rinsed rice and 1/4 teaspoon of salt. Stir briefly, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the water is absorbed.
  • Step 3: Add Milk and Sugar - Once the rice is cooked, add 4 cups of milk and 2/3 cup of granulated sugar to the saucepan. Stir well to combine the ingredients.
  • Step 4: Simmer the Mixture - Increase the heat slightly and bring the mixture to a gentle simmer. Once it reaches a simmer, reduce the heat back to low. Cook uncovered for about 25 to 30 minutes, stirring frequently to prevent sticking. The pudding will thicken as it cooks.
  • Step 5: Flavor It - After the pudding has thickened to your desired consistency, remove it from the heat and stir in 1 1/4 teaspoons of vanilla extract. This adds a lovely aromatic flavor to your pudding.
  • Step 6: Cool and Serve - Let the rice pudding cool for a few minutes before serving. You can enjoy it warm or refrigerate it for later. When ready to serve, scoop it into bowls and sprinkle with ground cinnamon for an extra touch of flavor.
