Easy Taco Casserole Recipe

A quick, family-friendly taco casserole layered with crushed Doritos, seasoned ground beef, beans, corn, salsa, and melted cheese. Top with your favorite fresh toppings if desired.

  • 1 poundlean ground beef
  • 1/2 mediumonionchopped
  • 1 tablespoonchili powder
  • 1/2 teaspoongarlic powder
  • 1/2 teaspoonground cumin
  • 2 cupscrushed DoritosI used Nacho Cheese flavor
  • 1 14 ounce canblack beansdrained & rinsed
  • 1 12 ounce cancorndrained
  • 1 15.5 ounce jarsalsause your favorite kind
  • 2 cupsshredded Mexican cheese blend or use cheddardivided
  • Toppings optional, to taste: tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce, etc.

  • Preheat the oven to 350°F and place the oven rack in the middle position.
  • Spread 2 cups crushed Doritos in an even layer across the bottom of a 9×13-inch (or similar size) casserole dish.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground beef and cook, breaking the meat into pieces, about 5 minutes until browned.
  • Add 1/2 medium onion (chopped), 1 tablespoon chili powder, 1/2 teaspoon garlic powder, and 1/2 teaspoon ground cumin to the skillet. Cook, stirring occasionally, about 5 minutes until the onion is softened and the beef is cooked through.
  • If there is a lot of excess fat in the skillet, spoon most of it out and discard (leave a little for flavor if desired).
  • Drain and rinse the 14-ounce can of black beans and drain the 12-ounce can of corn. Stir the drained beans, drained corn, and the 15.5-ounce jar of salsa into the beef mixture. Stir in half of the shredded cheese (half of the 2 cups listed). Heat until the mixture is warmed through and the cheese starts to melt.
  • Spoon the beef/bean/corn/salsa mixture evenly over the Doritos in the casserole dish.
  • Sprinkle the remaining shredded cheese over the top of the casserole.
  • Bake the casserole, uncovered, for 15–20 minutes, or until the casserole is hot and the cheese on top is melted and bubbly.
  • Meanwhile, prep any optional toppings (tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce, etc.). Serve the casserole as-is or with your favorite toppings.

Serves 6-8 depending on how much people eat.
