- 1 can mild red enchilada sauce 10-ounce (homemade is great!)
- 1.5 pounds boneless, skinless chicken breasts cut in half lengthwise
- 1 can mild green chilis 14-ounce
- 1 cup reduced-fat shredded Mexican cheese blend
- 1 large avocado cubed (yields about 6 ounces)
- 1 to taste Chopped cilantro for garnish

Preparation Steps
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cumin, dried oregano, garlic powder, chili powder, Kosher salt, and freshly ground black pepper. Add the chicken breasts and coat them evenly with the spice mixture.
Lightly spray a skillet with cooking spray and heat over medium-high heat. Add the seasoned chicken and cook for about 4-5 minutes on each side, or until browned and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove from heat and let cool slightly.
Once the chicken has cooled, take each piece and layer on a spoonful of green chilis and a sprinkle of cheese. Roll the chicken tightly and place seam-side down in a greased baking dish.
Pour the enchilada sauce evenly over the rolled-up chicken and sprinkle the remaining cheese on top.
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Once done, take the roll-ups out of the oven and let them sit for a few minutes before serving. Top with fresh avocado and chopped cilantro for a burst of flavor!
- Feel free to experiment with different types of cheese. Pepper jack adds a nice kick!
- If you're not a fan of green chilis, try diced bell peppers or jalapeños instead.
- For a vegetarian option, replace the chicken with sautéed mushrooms or a mix of your favorite vegetables.
