  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 2 pounds Green beans, trimmed and cut lengthwise
  • 2 medium Tomatoes, peeled and diced
  • 2 cloves Garlic, minced
  • 3 tablespoons Water or vegetable stock
  • Salt & pepper to taste
  • Lemon juice for serving (optional)

Instructions
 

  • Step 1: Prepare all ingredients by trimming the green beans and cutting them lengthwise. Dice the onion and mince the garlic. Peel the tomatoes.
  • Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until translucent.
  • Step 3: Add the minced garlic to the skillet and cook for another minute. Then add the diced tomatoes and cook for 3-4 minutes until they start breaking down.
  • Step 4: Add the green beans to the skillet, stirring to coat with the mixture. Pour in the water or vegetable stock, cover, and simmer for about 15 minutes.
  • Step 5: Season with salt and pepper to taste, and cook uncovered for another 2-3 minutes to let excess liquid evaporate.
  • Step 6: Remove from heat and serve warm or at room temperature, drizzled with lemon juice if desired.

Notes

For best flavor, use fresh green beans. Consider adding spices like cumin or coriander for extra flavor.
