Instructions
Step 1: Prepare the Dough - Activate the yeast by combining it with warm water and sugar. Let it froth for 5-10 minutes. In a mixing bowl, combine flour and salt, make a well, and add the yeast mixture, warm water, olive oil, and egg. Mix until a shaggy dough forms.
Step 2: Knead the Dough - Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled in size.
Step 3: Prepare the Filling - Crumble the feta cheese in a bowl, add chopped parsley, and mix well.
Step 4: Shape the Pastries - Punch down the risen dough, divide into portions, roll each into a circle, and place filling in the center. Fold and seal the edges.
Step 5: Final Touches - Brush with beaten egg and sprinkle sesame seeds if desired.
Step 6: Bake the Pastries - Preheat oven to 375°F (190°C). Bake pastries on a lined baking sheet for 25-30 minutes until golden brown.
Step 7: Serve and Enjoy - Let cool slightly and serve warm or at room temperature.
