Ingredients
  

For the Chicken Asado:

  • 2 pounds chicken thighs bone-in, skin removed
  • 1/4 cup soy sauce
  • 1/4 cup lemon or calamansi juice
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons cooking oil
  • 1 cup tomato sauce
  • 2 bay leaves
  • 1/2 teaspoon black pepper
  • 1 large potato cubed
  • 1/2 large red bell pepper cubed
  • 1/2 large green bell pepper cubed

Cooking Instructions:

  • Step 1: Marinate the Chicken
    In a large bowl, combine the chicken thighs, soy sauce, and lemon or calamansi juice. Mix well and let it marinate for at least 30 minutes.
  • Step 2: Sauté the Aromatics
    Heat the cooking oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until the onions become translucent and fragrant, about 3-5 minutes.
  • Step 3: Brown the Chicken
    Remove the chicken from the marinade and add it to the pot. Brown the chicken on all sides for about 5-7 minutes.
  • Step 4: Add the Sauce
    Pour in the reserved marinade along with the tomato sauce, bay leaves, and black pepper. Stir everything together.
  • Step 5: Simmer the Chicken
    Cover the pot and let the chicken simmer on low heat for about 30-40 minutes.
  • Step 6: Add the Vegetables
    Add the cubed potato and bell peppers to the pot. Stir, cover again, and cook for an additional 15 minutes or until the vegetables are tender.
  • Step 7: Serve and Enjoy
    Once everything is cooked through, remove from heat. Serve hot over steamed rice.
