French Connection Sandwich (Two Ways)

For the Sandwich:
- 4 large soft rolls (or 24 rounds of sandwich bread, about 2 inches in diameter)
- 1 large wedge brie (at room temperature)
- 1 cucumber (washed and thinly sliced)
- 1 small onion (thinly sliced)
- Mayonnaise (to taste)
For the Garlic Butter:
- 1/4 cup unsalted butter (at room temperature)
- 2 large cloves garlic (smashed and finely minced)
- 2 tablespoons chopped fresh parsley
- 1/8 teaspoon salt
Preparation Steps:
In a mixing bowl, combine the room temperature unsalted butter, minced garlic, chopped parsley, and salt. Mix well until all ingredients are fully incorporated.
If you’re making full-size sandwiches, slice the large soft rolls in half. For hors d'oeuvres, use a round cutter to cut out 24 circles from the sandwich bread, about 2 inches in diameter.
Spread a generous layer of mayonnaise on the inside of each roll or bread circle. Next, place a slice of brie on one half, followed by a few slices of cucumber and onion. Top with the other half of the roll or another bread circle.
Spread the prepared garlic butter on the outside of each sandwich.
Preheat your oven or toaster oven to 375°F (190°C). Place the sandwiches on a baking sheet and toast them for about 10-15 minutes, or until the bread is golden brown and the brie starts to melt.
Remove the sandwiches from the oven and let them cool for a minute. Slice them into manageable pieces if desired, and serve warm.
- Garlic butter can be made a day in advance. Let it soften before spreading.
- Slice the cucumber and onion ahead of time and store in the fridge.
- Assemble the sandwiches a few hours before serving and toast when ready.
