- 1 recipe Cashew Sour Cream
- 1/2 cup Chopped Caramelized Onions
- 1/4 teaspoon Onion Powder
- 1/2 teaspoon Sea Salt
- Freshly Ground Black Pepper
- 2 tablespoons Chopped Chives
- 1 bag Potato Chips for serving
Begin by making the cashew sour cream. Soak 1 cup of cashews in water for at least 4 hours, then drain and rinse. Blend the cashews with 1/2 cup of water, 1 tablespoon of lemon juice, and a pinch of salt until smooth and creamy. Adjust the consistency with more water if necessary.
In a large skillet over medium heat, add a tablespoon of oil and sliced onions. Cook them slowly, stirring occasionally until they turn golden brown and caramelized, about 20-30 minutes. Once done, let them cool slightly.
In a mixing bowl, combine the cashew sour cream, chopped caramelized onions, onion powder, sea salt, and freshly ground black pepper. Mix well until everything is evenly incorporated.
Fold in the chopped chives for an added burst of freshness.
Cover the dip and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve in a bowl with a generous side of potato chips for dipping. Enjoy!
