Ingredients
  

  • 1 recipe Cashew Sour Cream
  • 1/2 cup Chopped Caramelized Onions
  • 1/4 teaspoon Onion Powder
  • 1/2 teaspoon Sea Salt
  • Freshly Ground Black Pepper
  • 2 tablespoons Chopped Chives
  • 1 bag Potato Chips for serving

Instructions
 

  • Begin by making the cashew sour cream. Soak 1 cup of cashews in water for at least 4 hours, then drain and rinse. Blend the cashews with 1/2 cup of water, 1 tablespoon of lemon juice, and a pinch of salt until smooth and creamy. Adjust the consistency with more water if necessary.
  • In a large skillet over medium heat, add a tablespoon of oil and sliced onions. Cook them slowly, stirring occasionally until they turn golden brown and caramelized, about 20-30 minutes. Once done, let them cool slightly.
  • In a mixing bowl, combine the cashew sour cream, chopped caramelized onions, onion powder, sea salt, and freshly ground black pepper. Mix well until everything is evenly incorporated.
  • Fold in the chopped chives for an added burst of freshness.
  • Cover the dip and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve in a bowl with a generous side of potato chips for dipping. Enjoy!

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Feel free to customize with different herbs or spices for a unique flavor.
