  • 8-10 large carrots peeled and cut into pieces
  • ½ cup butter melted, unsalted
  • 1 tablespoon olive oil extra virgin
  • 3 cloves garlic chopped
  • 1 tablespoon parmesan cheese grated
  • to taste salt
  • to taste pepper freshly ground
  • to taste freshly shredded parmesan cheese for topping
  • to taste fresh parsley for garnish

  • Start by peeling the carrots and cutting them into even-sized pieces.
  • In a large skillet, heat the olive oil over medium heat. Once shimmering, add the carrots.
  • Add the carrot pieces to the skillet, season with salt and pepper, and sauté for about 5-7 minutes until slightly softened.
  • Lower the heat to medium-low, then add the chopped garlic and melted butter. Stir to coat the carrots and cook for an additional 3-5 minutes.
  • Sprinkle the grated parmesan cheese over the carrots and stir to combine.
  • Transfer the carrots to a serving dish, top with freshly shredded parmesan cheese and chopped parsley, and enjoy warm!

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • A pinch of red pepper flakes can add heat.
  • Do not overcook; carrots should be tender yet slightly crunchy.
