  • 2 tablespoons cold unsalted butter
  • 6 finely grated garlic cloves
  • 2 sticks softened unsalted butter
  • 2 tablespoons minced fresh Italian flat leaf parsley
  • 1 tablespoon minced fresh chives
  • Coarse salt to taste
  • Fresh cracked pepper to taste

  • Start by gathering all your ingredients on the countertop. This ensures a smooth cooking process and prevents any last-minute scrambling.
  • Using a garlic grater or microplane, finely grate the garlic cloves. This will help release their natural oils and flavors, maximizing the garlic essence in your butter.
  • In a medium-sized mixing bowl, add the softened unsalted butter and the cold unsalted butter. Using a spatula, mix them together until well combined. The cold butter adds a nice texture to the overall blend.
  • Fold in the grated garlic, minced parsley, and chives. Make sure to mix thoroughly so that the garlic and herbs are evenly distributed throughout the butter.
  • Sprinkle in coarse salt and fresh cracked pepper. Start with a little, as you can always add more later. Taste the mixture to ensure it meets your flavor preference.
  • Transfer the garlic butter mixture onto a piece of plastic wrap or parchment paper. Roll it into a log shape, twisting the ends to secure. Refrigerate for at least one hour or until firm.
