  • 2 tablespoons Olive oil
  • 1 medium Onion, finely diced
  • 1 pound Green beans, trimmed
  • 1 medium Tomato, diced
  • 1 pound Baby potatoes, halved
  • to taste Salt & pepper
  • 3 tablespoons Water
  • Lemon juice for serving (optional)
  • Parsley for garnish (optional)

Instructions
 

  • Step 1: Gather all ingredients. Wash and trim the green beans, wash and halve the baby potatoes, and dice the onion and tomato.
  • Step 2: In a large pan, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  • Step 3: Add halved baby potatoes to the pan and stir to coat. Cook for an additional 5 minutes.
  • Step 4: Incorporate the trimmed green beans and stir. Cook for about 5 minutes.
  • Step 5: Add diced tomato, salt, and pepper. Stir to combine.
  • Step 6: Pour in water, cover the pan, and steam for 15-20 minutes, stirring occasionally.
  • Step 7: Once vegetables are tender, stir and adjust seasoning. Drizzle lemon juice if desired.
  • Step 8: Transfer to a serving dish and garnish with parsley. Serve warm or at room temperature.

Notes

Use fresh green beans for the best flavor. Consider adding minced garlic for extra flavor. This dish can be made ahead of time and tastes even better the next day.
