For the Sandwich:
- 4 slices whole grain bread
- 1/4 cup hummus
- 3 tablespoons kalamata olives halved
- 1/4 cup crumbled feta cheese
- 3 tablespoons pickled banana pepper slices
- 1 cup cucumbers thinly sliced
- 1 medium tomato thinly sliced
- 1/4 red onion thinly sliced
- 6 pieces butter lettuce
Instructions:
Start by washing and slicing your vegetables. Thinly slice the cucumbers, tomato, and red onion. Halve the kalamata olives and set everything aside.
Take a slice of whole grain bread and spread 1 tablespoon of hummus evenly on one side. Repeat this for two more slices of bread.
On top of the hummus, begin layering your ingredients. Start with a few pieces of butter lettuce, followed by the sliced cucumbers, tomatoes, and red onion. Sprinkle the halved kalamata olives and crumbled feta cheese atop the layers.
For a zesty kick, add the pickled banana pepper slices on top of the feta cheese.
Finish off your sandwich by placing the final slice of hummus-spread bread on top. Gently press down to ensure all the ingredients are snugly packed together.
