In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely diced red onion and large onion. Sauté for about 3-4 minutes until they become translucent and fragrant. Next, toss in the diced red pepper and continue to cook for another 2-3 minutes until the peppers are tender.
Add 1 pound of ground turkey to the skillet. Use your spatula to break it up into smaller pieces. Season with salt and pepper to taste. Cook for about 5-7 minutes until the turkey is browned and cooked through.
Once the turkey is cooked, stir in the ground chili powder, ground cumin, paprika, dried oregano, and minced garlic. Cook for about 1-2 minutes until the spices are fragrant.
Stir in the drained mild diced green chiles and your choice of mild green enchilada sauce or salsa verde. Mix well to combine all the flavors.
Add the drained and rinsed black beans and optional frozen corn to the skillet. Stir everything together and let it simmer for about 5 more minutes, allowing the flavors to meld.
Sprinkle 1-1/2 cups of freshly shredded pepper Jack cheese over the mixture. Cover the skillet and let it cook for 2-3 minutes until the cheese is melted and bubbly.
Remove the skillet from heat. Squeeze fresh lime juice over the top if desired, and sprinkle with finely chopped cilantro. Serve warm with your favorite toppings.
