  • 15 oz garbanzo beans canned, rinsed and drained
  • 2 tsp olive oil
  • 2 tsp finely minced garlic
  • 3 cups washed lettuce
  • 3 cups washed greens such as spinach, arugula, or mixed greens
  • 2 oz crumbled Feta
  • 3 T Mediterranean Salad Dressing lemony vinaigrette
  • to taste Salt and fresh ground black pepper

  • Step 1: Prepare the Chickpeas. Rinse and drain the canned garbanzo beans thoroughly under cold water.
  • Step 2: Sauté the Garlic. Heat the olive oil over medium heat, add the minced garlic, and sauté for about 1-2 minutes until fragrant.
  • Step 3: Wash and Dry the Greens. Wash your lettuce and greens thoroughly and pat them dry.
  • Step 4: Combine Ingredients. In a large mixing bowl, combine the washed lettuce, greens, rinsed chickpeas, and cooled garlic with olive oil.
  • Step 5: Add Feta and Dressing. Sprinkle the crumbled feta over the salad and drizzle in the Mediterranean salad dressing. Toss gently.
  • Step 6: Season and Serve. Season with salt and fresh ground black pepper to taste. Serve immediately or refrigerate for a chilled option.

Notes
