Ingredients
  

Marinade

  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Vegetables

  • 1 zucchini, sliced into 1/3 inch slices
  • 2 bell peppers, sliced into 1-inch pieces
  • 1 onion, quartered into 1-inch pieces

Chicken

  • 1.5 pounds chicken breasts, skinless and boneless, cubed into 1-inch pieces

Instructions
 

  • Step 1: In a large bowl, combine the olive oil, garlic powder, smoked paprika, salt, and black pepper. Whisk them together until well blended. Add the cubed chicken breasts to the marinade and toss to ensure each piece is thoroughly coated. Cover the bowl with plastic wrap and allow it to marinate in the refrigerator for at least 30 minutes.
  • Step 2: While the chicken is marinating, wash and slice your vegetables. Cut the zucchini into 1/3 inch rounds, slice the bell peppers into 1-inch pieces, and quarter the onion.
  • Step 3: Once your chicken has marinated and your vegetables are ready, it’s time to assemble your kabobs. If you are using wooden skewers, soak them in water for about 30 minutes before using. Thread the chicken and veggies onto the skewers, alternating between chicken, zucchini, bell peppers, and onion.
  • Step 4: Preheat your grill to medium-high heat (about 400°F to 450°F). Oil the grates lightly with a paper towel dipped in oil to prevent sticking.
  • Step 5: Place the assembled kabobs on the grill. Cook them for about 12-15 minutes, turning them every few minutes to ensure that they cook evenly on all sides.
  • Step 6: Once the kabobs are done, remove them from the grill and let them rest for a few minutes. Serve the kabobs warm.

Notes

Leftover kabobs can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place them in the oven at 350°F for about 10 minutes.
