Ingredients
  

Lamb Chops

  • 2 lbs lamb rib chops (950g)
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons olive oil

Instructions
 

  • In a small bowl, combine the salt, ground black pepper, and freshly chopped rosemary to create the seasoning blend.
  • Pat the lamb chops dry with paper towels. Rub the olive oil all over the chops and sprinkle the seasoning mixture generously over each side.
  • Preheat your grill to medium-high heat.
  • Place the seasoned lamb chops on the grill and sear for about 4-5 minutes on one side.
  • Flip the lamb chops and continue cooking for an additional 4-5 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
  • Remove the lamb chops from the grill and let them rest for about 5 minutes before serving.
  • Serve the grilled lamb chops hot with your favorite sides and garnish with additional chopped rosemary if desired.

Notes

For best results, select high-quality lamb chops and allow them to come to room temperature before grilling.
