Instructions
In a small bowl, combine the salt, ground black pepper, and freshly chopped rosemary to create the seasoning blend.
Pat the lamb chops dry with paper towels. Rub the olive oil all over the chops and sprinkle the seasoning mixture generously over each side.
Preheat your grill to medium-high heat.
Place the seasoned lamb chops on the grill and sear for about 4-5 minutes on one side.
Flip the lamb chops and continue cooking for an additional 4-5 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
Remove the lamb chops from the grill and let them rest for about 5 minutes before serving.
Serve the grilled lamb chops hot with your favorite sides and garnish with additional chopped rosemary if desired.
Notes
For best results, select high-quality lamb chops and allow them to come to room temperature before grilling.
