Ingredients
  

  • 1 pound chicken breast cut into 1-inch cubes
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 red bell pepper cut into squares
  • 1 green bell pepper cut into squares
  • 1/4 cup soy sauce use low-sodium for a milder taste
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon black pepper freshly ground for best flavor

Instructions
 

  • In a medium bowl, whisk together the soy sauce, honey, olive oil, garlic powder, ginger powder, and black pepper. This simple marinade packs a punch of flavor and tenderizes the chicken beautifully.
  • Add the cubed chicken breast to the marinade, ensuring each piece is well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor. While waiting, you can prep the vegetables and pineapple chunks.
  • Thread the marinated chicken cubes, pineapple chunks, red bell pepper squares, and green bell pepper squares onto the skewers. Alternate the ingredients for a colorful and balanced skewer. Make sure not to pack the pieces too tightly to allow even cooking.
  • Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning every 3-4 minutes to ensure even charring and cooking. The chicken should reach an internal temperature of 165°F (74°C) and be slightly caramelized on the edges.
  • Once cooked, remove the kebabs from the grill and let them rest for a few minutes. Serve them over steamed rice, alongside a fresh salad, or wrapped in warm pita bread for a delicious meal.
