Ingredients
  

Dry Ingredients

  • 1 cup unbleached all-purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup light brown sugar packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 1 cup ripe bananas mashed
  • 1/2 cup almond milk
  • 1/2 cup coconut oil at room temperature
  • 1/2 cup granola of your choice
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease your muffin tin or line it with muffin liners.
  • In a large mixing bowl, whisk together the unbleached all-purpose flour, whole wheat flour, light brown sugar, baking powder, kosher salt, and ground cinnamon.
  • In a separate bowl, mash the ripe bananas until smooth, then add the almond milk and coconut oil, stirring until well combined.
  • Pour the wet ingredients into the bowl of dry ingredients and gently mix until just combined.
  • Carefully fold in the granola and an additional teaspoon of cinnamon.
  • Divide the muffin batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

  • Store muffins in an airtight container at room temperature for up to 3 days.
  • Freeze muffins wrapped in plastic wrap for up to 3 months for longer storage.
  • Experiment with different granola types or add chocolate chips for a special touch.
