Ingredients
  

For the Bread:

  • 1.5 cups white whole wheat flour
  • 0.5 cup sugar adjust to taste
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 5 tablespoons neutral flavored oil or applesauce for lower fat
  • 1 cup water
  • 0.75 cup blueberries fresh or frozen

Preparation Steps:

  • Step 1: Preheat the oven to 350°F (175°C).
  • Step 2: Grease your loaf pan or line it with parchment paper.
  • Step 3: In a large bowl, whisk together the white whole wheat flour, sugar, baking soda, and salt.
  • Step 4: In another bowl, mix the vanilla extract, vinegar, oil, and water.
  • Step 5: Pour the wet mixture into the dry ingredients and gently fold until just combined.
  • Step 6: Fold in the blueberries gently.
  • Step 7: Transfer the batter into the prepared loaf pan.
  • Step 8: Bake for 50-60 minutes, or until a toothpick comes out clean.
  • Step 9: Cool in the pan for 10 minutes, then transfer to a cooling rack.

Notes

  • Cool the bread completely before slicing to avoid a gummy texture.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months; wrap slices individually.
