Cuisine Mexican
- 2 cups chicken fillet, pre-cooked and shredded
- 1 cup Mexican rice or brown rice, pre-cooked
- 1 avocado, diced
- 1 cup broccoli florets, cooked and chopped
- 2 tablespoons cilantro, chopped
- 1 cup sharp cheddar cheese, reduced-fat, grated
- 5 whole grain tortillas, 8 inches
- 1 tablespoon extra virgin olive oil
Start by gathering all your ingredients. If you haven't already, pre-cook the rice according to package instructions and chop the broccoli florets. You can steam them for a few minutes until tender.
In a large mixing bowl, combine the shredded chicken, pre-cooked rice, diced avocado, cooked broccoli, chopped cilantro, and grated cheddar cheese. Drizzle in the extra virgin olive oil. Gently mix everything together until well combined, ensuring the avocado and cheese are evenly distributed.
In a skillet over medium heat, warm the whole grain tortillas for about 30 seconds on each side. This step will make them more pliable and easier to wrap.
Place a generous amount of the filling mixture in the center of each tortilla. Be careful not to overfill, as this can make wrapping difficult. Fold in the sides of the tortilla, then roll it up from the bottom to the top to create a burrito shape.
Cut each wrap in half diagonally for a beautiful presentation, and serve them warm. You can enjoy them as is or pair them with your favorite salsa or dipping sauce for an extra burst of flavor.
- These wraps can be stored in the refrigerator for up to 3 days.
- Consider freezing the wraps for up to 3 months for meal prep.
- Use a non-stick skillet to avoid sticking when warming the tortillas.
