Ingredients
  

For the Noodles:

  • 9 ounces ramen noodles

For the Beef and Vegetables:

  • 1 tablespoon olive oil For sautéing
  • 1 pound ground beef
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup bok choy shredded
  • 1 large carrot shredded or sliced thin

For the Sauce:

  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons rice vinegar

For Garnish:

  • 3 green onions chopped
  • 2 tablespoons sesame seeds toasted

Instructions
 

  • Begin by boiling a pot of water. Once boiling, add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.
  • In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  • Once the beef is browned, add the sliced onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until the onion is translucent and fragrant.
  • Stir in the shredded bok choy and sliced carrot. Cook for another 2-3 minutes until the vegetables are tender but still crisp.
  • In a small bowl, whisk together the oyster sauce, hoisin sauce, dark soy sauce, sesame oil, and rice vinegar. Pour this sauce mixture over the beef and vegetable mixture in the skillet.
  • Add the cooked ramen noodles to the skillet. Gently toss everything together, ensuring the noodles are coated in the sauce and mixed evenly with the beef and vegetables.
  • Remove the skillet from heat. Garnish with chopped green onions and toasted sesame seeds before serving hot.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze the beef and vegetable mixture separately from the noodles for up to 2 months.
  • Reheat in a skillet over medium heat, adding a splash of water or broth to loosen the noodles if necessary.
