Ingredients
  

  • 8 ounces Neufchâtel cheese or low-fat cream cheese (nonfat will also work)
  • 1 cup white sharp cheddar cheese (reduced-fat, shredded)
  • 1/2 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Tabasco sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher or sea salt
  • 2 teaspoons Worcestershire sauce
  • 2 scallions (sliced, just greens)
  • 1/2 cup pistachios (coarsely chopped)
  • 1/2 cup almonds or pine nuts (coarsely chopped)

Instructions
 

  • In a mixing bowl, combine the Neufchâtel cheese and shredded white sharp cheddar cheese. Use your spatula to mix until smooth and creamy.
  • To the cheese mixture, add the freshly squeezed lemon juice, Tabasco sauce, garlic powder, kosher salt, and Worcestershire sauce. Stir until all ingredients are thoroughly combined.
  • Fold in the sliced scallions, ensuring they are evenly distributed throughout the cheese mixture.
  • Using your hands, form the cheese mixture into a ball shape. If it’s too sticky, you can lightly wet your hands to make shaping easier.
  • In a separate bowl, combine the coarsely chopped pistachios and almonds (or pine nuts). Roll the cheeseball in the nut mixture, pressing gently to adhere the nuts to the surface.
  • Wrap the cheeseball in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the cheeseball to firm up.
  • Remove the cheeseball from the refrigerator and unwrap it. Place it on your serving platter and pair it with an assortment of crackers. Enjoy the creamy, nutty goodness with your favorite crispy bites!

Notes

  • Store the cheeseball in the refrigerator for up to a week, wrapped in plastic wrap.
  • For a nut-free version, replace the nuts with sunflower seeds or pumpkin seeds.
