Ingredients
  

For the Granola:

  • 4 cups old-fashioned oats
  • 3/4 cup shredded coconut
  • 1/4 cup packed brown sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup honey
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped almonds

Instructions:

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, combine old-fashioned oats, shredded coconut, packed brown sugar, and ground cinnamon. Stir until well mixed.
  • Step 3: In a separate bowl, whisk together vegetable oil, honey, pure maple syrup, and vanilla extract. Pour over dry ingredients and mix until evenly coated.
  • Step 4: Line a baking sheet with parchment paper and spread the granola mixture evenly. Press down slightly with a spatula.
  • Step 5: Bake for about 20-25 minutes, stirring halfway through. Watch closely to prevent burning.
  • Step 6: Once baked, stir in raisins, dried cranberries, and chopped almonds. Allow to cool completely.
  • Step 7: To assemble parfaits, layer yogurt, cooled granola, and fresh fruits in serving glasses or bowls.
