Ingredients
  

  • 1.5 pounds beef sirloin or flank steak, sliced thinly against the grain
  • 1/4 cup honey
  • 1/4 cup soy sauce choose a low-sodium option
  • 2 tablespoons olive oil for both the marinade and roasting the potatoes
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • salt and pepper to taste
  • 4 medium potatoes chopped into bite-sized pieces, Yukon Gold or red potatoes
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

Instructions
 

Prep the potatoes

  • Preheat your oven to 425°F (220°C). In a large bowl, toss the chopped potatoes with 1 tablespoon olive oil, chopped rosemary, thyme, salt, and pepper. Spread them out evenly on a baking sheet, making sure they aren’t overcrowded to maximize crispiness. Roast for 35-40 minutes, flipping halfway through for golden, crispy edges.

Marinate the beef

  • While the potatoes roast, mix together honey, soy sauce, 1 tablespoon olive oil, minced garlic, ground ginger, salt, and pepper in a bowl. Add the sliced beef and toss to coat thoroughly. Let it marinate for at least 10 minutes; this allows the flavors to meld and the beef to tenderize.

Cook the beef

  • Heat a large skillet over medium-high heat. Once hot, add the marinated beef in a single layer (work in batches if necessary). Cook for 2-3 minutes on each side until caramelized, sticky, and just cooked through. Avoid overcrowding the pan to maintain that perfect sear.
