For the Chicken:

  • 3 lbs bone-in skin-on chicken thighs (about 8 pieces), trimmed of excess skin and fat
  • 1 tsp fine sea salt
  • 1/2 tsp coarsely ground black pepper , plus more to garnish
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 Tbsp olive oil
  • 3 cloves garlic , minced (about 1 Tbsp)
  • 1/2 tsp dried rosemary or 2 tsp chopped fresh rosemary

  • Step 1: Prepare the Chicken - Preheat your oven to 400°F (200°C). Rinse the chicken thighs under cold water and pat them dry with paper towels. Trim any excess skin and fat.
  • Step 2: Make the Marinade - In a mixing bowl, combine the Dijon mustard, honey, olive oil, minced garlic, dried or fresh rosemary, fine sea salt, and coarsely ground black pepper. Whisk until well combined and smooth.
  • Step 3: Coat the Chicken - Place the chicken thighs in a large baking dish. Pour the marinade over the chicken, making sure each piece is generously coated.
  • Step 4: Bake the Chicken - Transfer the dish to the preheated oven and bake for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
  • Step 5: Serve and Garnish - Remove from the oven, let rest for a few minutes, garnish with black pepper, and serve warm.

Notes

  • Ensure chicken is not overcooked by using a meat thermometer.
  • If the glaze is too sweet, add vinegar or lemon juice to balance.
