For the Chicken:
- 3 lbs bone-in skin-on chicken thighs (about 8 pieces), trimmed of excess skin and fat
- 1 tsp fine sea salt
- 1/2 tsp coarsely ground black pepper , plus more to garnish
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 Tbsp olive oil
- 3 cloves garlic , minced (about 1 Tbsp)
- 1/2 tsp dried rosemary or 2 tsp chopped fresh rosemary
Instructions:
Step 1: Prepare the Chicken - Preheat your oven to 400°F (200°C). Rinse the chicken thighs under cold water and pat them dry with paper towels. Trim any excess skin and fat.
Step 2: Make the Marinade - In a mixing bowl, combine the Dijon mustard, honey, olive oil, minced garlic, dried or fresh rosemary, fine sea salt, and coarsely ground black pepper. Whisk until well combined and smooth.
Step 3: Coat the Chicken - Place the chicken thighs in a large baking dish. Pour the marinade over the chicken, making sure each piece is generously coated.
