  • Step 1: Mix Dry Ingredients - In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, salt, and baking soda. Whisk them together until they are evenly mixed.
  • Step 2: Combine Wet Ingredients - In a separate bowl, mix the buttermilk, vegetable oil, and the lightly beaten egg. Stir until combined. If you find the mixture too thick, feel free to add 2 to 4 tablespoons of buttermilk to reach your desired consistency.
  • Step 3: Combine Wet and Dry Ingredients - Pour the wet ingredients into the bowl with the dry ingredients. Gently fold them together with a spatula or a whisk until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  • Step 4: Preheat the Griddle - Heat your griddle or non-stick skillet over medium heat and lightly grease it with vegetable oil. You can test if it’s ready by sprinkling a few drops of water on it; if they dance and sizzle, you’re good to go!
  • Step 5: Cook the Pancakes - Pour about 1/4 cup of batter onto the heated griddle for each pancake. Cook until you see bubbles forming on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes on the other side until golden brown.
  • Step 6: Serve Warm - Once cooked, place the pancakes on a plate and keep them warm in a low oven while you repeat with the remaining batter. Serve with syrup, fresh fruit, or any of your favorite toppings.
