Step 1: Begin by washing the baby potatoes thoroughly to remove any dirt. Once cleaned, cut them in half for even cooking.
Step 2: Place the halved potatoes into the Instant Pot. Add the minced garlic, thyme, oregano (or rosemary), ground black pepper, and sea salt flakes. Pour the vegetable stock over the top.
Step 3: Seal the Instant Pot lid and set the pressure valve to “sealing.” Select the high-pressure setting and cook for 5 minutes. Allow the pressure to release naturally for 5 more minutes.
Step 4: Carefully remove the lid and drizzle the melted butter over the cooked potatoes. Toss gently to coat all the potatoes.
Step 5: Transfer the buttered potatoes to a serving bowl and sprinkle with additional herbs if desired. Serve warm.
