Ingredients
  

Potatoes

  • 2 pounds baby potatoes washed and cut into halves

Garlic

  • 2 cloves garlic minced

Herbs

  • 1 teaspoon thyme
  • 1 teaspoon oregano or rosemary
  • ½ teaspoon ground black pepper
  • 1 teaspoon sea salt flakes

Butter

  • 3 tablespoons butter melted

Vegetable Stock

  • ½ cup vegetable stock (120 ml)

Instructions
 

  • Step 1: Begin by washing the baby potatoes thoroughly to remove any dirt. Once cleaned, cut them in half for even cooking.
  • Step 2: Place the halved potatoes into the Instant Pot. Add the minced garlic, thyme, oregano (or rosemary), ground black pepper, and sea salt flakes. Pour the vegetable stock over the top.
  • Step 3: Seal the Instant Pot lid and set the pressure valve to “sealing.” Select the high-pressure setting and cook for 5 minutes. Allow the pressure to release naturally for 5 more minutes.
  • Step 4: Carefully remove the lid and drizzle the melted butter over the cooked potatoes. Toss gently to coat all the potatoes.
  • Step 5: Transfer the buttered potatoes to a serving bowl and sprinkle with additional herbs if desired. Serve warm.

Notes

For extra flavor, consider using herb-infused butter or adding a squeeze of lemon juice just before serving.
