For the Tacos:
- 4 pieces boneless, skinless chicken breasts trimmed and cut into lengthwise strips
- 1/2 cup Pace Picante Sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 T Green Tabasco Sauce adjust to taste
- 2 T fresh-squeezed lime juice
- 4 oz cream cheese cubed
- 1 can (4 oz) diced green chiles with juice
- 3/4 cup grated Mexican Blend cheese
- 8 pieces Mission Carb Balance Low-Carb Tortillas
- to taste sliced olives optional
- to taste sliced green onions optional
Instructions:
Step 1: Prepare the Chicken - Trim any excess fat from the chicken breasts and cut them into lengthwise strips.
Step 2: Season the Chicken - In a large bowl, combine chicken strips with onion powder, garlic powder, Pace Picante Sauce, Green Tabasco Sauce, and lime juice. Mix well.
Step 3: Cook in the Instant Pot - Place the seasoned chicken in the Instant Pot with diced green chiles and cubed cream cheese. Secure the lid and cook on high pressure for 10 minutes.
Step 4: Release the Pressure - Perform a quick release of the pressure, then stir the chicken.
Step 5: Add the Cheese - Sprinkle grated Mexican Blend cheese over the mixture and stir until melted.
Step 6: Warm the Tortillas - Warm tortillas in a skillet or microwave.
Step 7: Assemble Your Tacos - Spoon the filling onto each tortilla, topping with olives and green onions if desired. Serve with extra Green Tabasco Sauce.
