Ingredients
  

Chicken

  • 2 pieces chicken breasts, skinless and boneless, cut into cutlets (see note*)

Seasoning

  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon Italian seasoning

Sauce and Cheese

  • 24 ounces marinara sauce (680g)
  • 0.5 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh basil leaves

Pasta

  • to taste cooked pasta for serving

Instructions
 

  • Step 1: Season the Chicken - Begin by seasoning your chicken cutlets with salt, pepper, and Italian seasoning. This step is essential, as it infuses the chicken with flavor right from the start.
  • Step 2: Sauté the Chicken - Set your Instant Pot to the sauté function. Add a small amount of oil, and once heated, place the seasoned chicken cutlets in the pot. Sauté for about 2-3 minutes per side until lightly browned.
  • Step 3: Add Marinara Sauce - Once the chicken is browned, pour the marinara sauce over the chicken cutlets. Ensure that they are well coated.
  • Step 4: Pressure Cook - Close the lid of your Instant Pot and ensure the valve is set to sealing. Set the Instant Pot to cook on high pressure for 10 minutes. Allow for a natural release for 5 minutes before manually releasing any remaining pressure.
  • Step 5: Add the Cheese - After removing the lid, sprinkle the grated parmesan cheese over the chicken, followed by the shredded mozzarella. Close the lid for a couple of minutes to allow the cheese to melt.
  • Step 6: Serve It Up - Prepare your cooked pasta according to package instructions while the cheese is melting. Serve the chicken parmesan over the pasta, garnished with fresh basil leaves.

Notes

Leftover Instant Pot Chicken Parmesan can be stored in an airtight container in the refrigerator for up to three days. To reheat, microwave in short intervals until warmed through.
