Ingredients
  

Protein

  • 2 large chicken breasts, sliced thinly

Vegetables

  • 1 large onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large green bell pepper, sliced

Seasoning

  • 1 tablespoon vegetable oil (optional) For enhanced flavor
  • 3 tablespoons fajita seasoning
  • 0.25 cup water 60 ml

Instructions
 

  • Step 1: Gather all your ingredients. Slice the chicken breasts, onion, and bell peppers to your desired thickness.
  • Step 2: Select the sauté function on your Instant Pot. If using, add the vegetable oil. Toss in the sliced onions and bell peppers, sauté for 3–4 minutes until they start to soften.
  • Step 3: Add the sliced chicken to the Instant Pot. Sprinkle the fajita seasoning over the chicken and vegetables, ensuring everything is well-coated.
  • Step 4: Pour in the water and scrape the bottom of the pot to deglaze.
  • Step 5: Secure the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 8 minutes.
  • Step 6: Once cooking is complete, perform a quick release by turning the valve to venting. Carefully open the lid and stir to combine.
  • Step 7: Serve your fajitas with tortillas and toppings like cheese, salsa, and guacamole.

Notes

For an extra kick, consider adding jalapeños or lime juice before serving. Leftovers can be stored in an airtight container for 3-4 days.
