Instant Pot Honey Mustard Chicken

Ingredients
  

Chicken

  • 6 pieces chicken thighs, bone-in, skin-on

Oil

  • 1 tablespoon olive oil or vegetable oil

Seasoning

  • to taste Salt and pepper

Liquid

  • ½ cup water

Garlic

  • 2 cloves garlic, minced

Sauce

  • ¼ cup honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons stone ground mustard/whole grain mustard (NOT ground mustard powder)

Vegetables

  • 1 pound baby potatoes, sliced in halves
  • 3 carrots, peeled and sliced into 1-2 inch pieces

Instructions
 

  • Step 1: Season the chicken thighs with salt and pepper.
  • Step 2: Set your Instant Pot to the ‘Sauté’ function. Add the olive oil and let it heat up. Sear the chicken thighs skin-side down for about 5-7 minutes until golden brown, then flip and sear the other side for 3-4 minutes.
  • Step 3: Remove the chicken and sauté minced garlic for about 30 seconds until fragrant, scraping down the sides of the pot.
  • Step 4: Return the chicken to the pot. Whisk together honey, Dijon mustard, and stone ground mustard in a mixing bowl, then pour over the chicken with ½ cup of water.
  • Step 5: Add halved baby potatoes and sliced carrots around the chicken.
  • Step 6: Close the lid and set to ‘Manual’ or ‘Pressure Cook’ for 12 minutes on high pressure.
  • Step 7: Once cooking is complete, perform a quick release, open the lid, and serve the Honey Mustard Chicken.

Notes

For extra flavor, marinate the chicken thighs in the honey mustard mixture for a couple of hours before cooking. If you prefer a thicker sauce, mix a tablespoon of cornstarch with two tablespoons of water and stir it in after cooking.
