Instructions
Step 1: Sauté the Aromatics - Set your Instant Pot to sauté mode. Add olive oil and butter, allowing them to melt. Add diced onion and sauté for 3-4 minutes until translucent.
Step 2: Add the Mushrooms - Toss in sliced mushrooms and sauté for 5-7 minutes until golden brown.
Step 3: Season and Add Garlic - Sprinkle in salt, black pepper, and Italian seasoning. Add crushed garlic and sauté for an additional minute.
Step 4: Add Rice and Liquid - Stir in rinsed basmati rice, then pour in vegetable stock and stir gently.
Step 5: Pressure Cook - Secure the lid and set the Instant Pot to cook on high pressure for 6 minutes. Allow for a natural pressure release for 10 minutes.
Step 6: Fluff and Serve - Open the lid, fluff the rice with a fork, and mix in sliced green onions before serving.
Notes
Rinse basmati rice thoroughly for fluffy rice. Experiment with different mushrooms for varying flavors.
