  • 4 pieces Sausages, sliced Kielbasa, turkey, chicken, or veggie sausage
  • 5 medium Potatoes, peeled and diced
  • 1 pound Green beans, fresh or frozen Not canned
  • 1 cup Red onion, diced About ¼-inch diced
  • 2 cups Chestnut mushrooms, sliced Into ½ inch slices
  • 3 tablespoons Butter
  • 2 teaspoons Fajita seasoning or Cajun seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt and pepper
  • ½ cup Vegetable stock, low sodium

Instructions
 

  • Step 1: Prepare the Ingredients. Slice your sausages, peel and dice your potatoes, dice the red onion, slice the mushrooms, and trim the green beans.
  • Step 2: Sauté the Sausages and Onions. Turn on the Instant Pot to 'Sauté', melt the butter, then add sausages and onions. Sauté for 3-5 minutes until browned.
  • Step 3: Add the Vegetables. Add potatoes, mushrooms, and green beans. Sprinkle in seasonings and pour vegetable stock on top without stirring.
  • Step 4: Pressure Cook. Seal the lid, set to 'Manual' or 'Pressure Cook' on high for 8 minutes. Allow natural release for 5 minutes before venting.
  • Step 5: Serve and Enjoy. Stir gently and serve hot.

Notes

For a smokier flavor, use andiratl sausage or smoked turkey sausage. Add jalapeños for spice. Use a liner for easy clean-up.
