  • 2 pounds boneless, skinless chicken breasts cut into bite-size pieces
  • ½ cup low-sodium soy sauce
  • 2 cloves garlic minced
  • 1 inch ginger peeled and grated
  • ¼ cup ketchup
  • 1 teaspoon hot sauce or sriracha
  • ¼ cup honey or brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon sesame seeds for garnish
  • to taste chopped green onion for garnish

Instructions
 

  • Step 1: Prepare the Chicken - Cut the boneless, skinless chicken breasts into bite-sized pieces.
  • Step 2: Combine the Sauce Ingredients - In a bowl, mix together the soy sauce, garlic, ginger, ketchup, hot sauce, honey, and sesame oil.
  • Step 3: Add Chicken and Sauce to Instant Pot - Place chicken pieces in the Instant Pot and pour the sauce mixture over them. Stir to coat.
  • Step 4: Cook the Chicken - Secure the lid and set the timer for 10 minutes at high pressure.
  • Step 5: Release the Pressure - Once cooking is complete, perform a quick release by turning the vent to the venting position.
  • Step 6: Thicken the Sauce - Mix cornstarch with water until smooth, add to the Instant Pot, and sauté until the sauce thickens.
  • Step 7: Serve and Garnish - Serve over rice or noodles, garnished with sesame seeds and chopped green onions.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking. Adjust heat by adding more hot sauce if desired.
