Instructions
Step 1: Prepare the Shrimp and Broccoli. Thaw shrimp if frozen, peel and devein if necessary, rinse and pat dry. Chop fresh broccoli into florets.
Step 2: Sauté the Aromatics. Turn the Instant Pot to 'Sauté', add olive oil, then garlic and ginger. Sauté for about 1 minute until fragrant.
Step 3: Add Broth and Shrimp. Pour in broth, soy sauce, and honey. Stir and gently add shrimp.
Step 4: Cook on High Pressure. Secure the lid, set to high pressure for 1 minute.
Step 5: Quick Release the Pressure. After 1 minute, perform a quick release of the pressure.
Step 6: Thicken the Sauce (Optional). Switch to 'Sauté', add cornstarch mixture, stir until thickened.
Step 7: Add Broccoli and Combine. If using fresh broccoli, add now and stir. Cook for a couple of minutes until heated through.
Step 8: Season and Serve. Taste and adjust seasoning with salt and pepper. Serve warm over rice or noodles.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat before serving.
