Ingredients
  

Meat

  • 1 pound Steak (rump, top round, or flank) Sliced into long strips

Vegetables

  • 1 medium Onion Peeled and sliced
  • 3 medium Bell Peppers Red, green, and yellow, thickly sliced

Seasoning and Liquids

  • 2 tablespoons Fajita Seasoning
  • 0.5 cup Beef or Vegetable Stock Or water
  • Salt To taste

  • Flour Tortillas For serving

Instructions
 

  • Step 1: Prepare the Ingredients - Slice the steak, peel and slice the onion, and wash and slice the bell peppers into thick strips.
  • Step 2: Season the Steak - In a large bowl, add the sliced steak and season it with the fajita seasoning. Mix well.
  • Step 3: Sauté the Vegetables - Set the Instant Pot to 'Sauté', add oil, and sauté the onions until softened, about 3-4 minutes. Remove and set aside.
  • Step 4: Cook the Steak - Add the seasoned steak to the pot, sear for 2 minutes on each side, then add stock and scrape up browned bits.
  • Step 5: Pressure Cook - Return onions to the pot, add bell peppers, close the lid, and pressure cook on high for 10 minutes. Allow natural release for 5 minutes, then quick release.
  • Step 6: Serve and Enjoy - Stir the mixture, season with salt, and serve hot with warm tortillas.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
