  • 3 pieces bell peppers any color

  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper

  • 1 cup mozzarella cheese grated, divided
  • 0.25 cup parmesan cheese grated
  • 1 tablespoon fresh basil or parsley chopped

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C). Wash the bell peppers, cut the tops off, and remove the seeds and membranes.
  • Step 2: In a large skillet over medium heat, add olive oil. Once hot, add the onion and sauté for 3-5 minutes until translucent. Add the ground turkey and cook until browned, about 5-7 minutes.
  • Step 3: Add Italian seasoning, salt, and black pepper to the meat mixture. Stir in the diced tomatoes, cooked brown rice, and ½ cup mozzarella cheese. Mix well.
  • Step 4: Stuff each bell pepper with the filling, pressing down gently to pack it in.
  • Step 5: Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes. Remove the foil, top with remaining mozzarella, and bake for an additional 10-15 minutes until cheese is golden.
  • Step 6: Remove from oven, let cool for a few minutes, and garnish with fresh basil or parsley before serving.

Notes

For a spicier kick, add red pepper flakes. For a vegetarian option, substitute ground turkey with sautéed mushrooms or lentils.
