Step 1: Preheat your oven to 375°F (190°C). Wash the bell peppers, cut the tops off, and remove the seeds and membranes.
Step 2: In a large skillet over medium heat, add olive oil. Once hot, add the onion and sauté for 3-5 minutes until translucent. Add the ground turkey and cook until browned, about 5-7 minutes.
Step 3: Add Italian seasoning, salt, and black pepper to the meat mixture. Stir in the diced tomatoes, cooked brown rice, and ½ cup mozzarella cheese. Mix well.
Step 4: Stuff each bell pepper with the filling, pressing down gently to pack it in.
Step 5: Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes. Remove the foil, top with remaining mozzarella, and bake for an additional 10-15 minutes until cheese is golden.
Step 6: Remove from oven, let cool for a few minutes, and garnish with fresh basil or parsley before serving.
