- 1 1/2 cups heavy cream or 1 can full-fat coconut milk
- 1/4 cup unsweetened cocoa powder
- 1 tbsp Dutch cocoa powder or additional regular cocoa powder
- 1/4 cup sweetener of choice
- 1/2 tsp pure vanilla extract optional
- 1/4 tsp instant coffee optional
Choose your base: heavy cream or full-fat coconut milk. If using coconut milk, refrigerate overnight to separate the cream.
In a mixing bowl, pour in the heavy cream or thick coconut cream and beat on medium-high speed until soft peaks form (2-3 minutes).
In a separate bowl, whisk together the unsweetened cocoa powder, Dutch cocoa powder, and sweetener. Add instant coffee if using.
Gently fold the cocoa mixture into the whipped cream with a spatula, being careful not to deflate the whipped cream.
If using vanilla extract, fold it in gently for added flavor.
Spoon the mousse into serving dishes and refrigerate for at least 30 minutes to set.
