Ingredients
  

  • 1 1/2 cups heavy cream or 1 can full-fat coconut milk
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp Dutch cocoa powder or additional regular cocoa powder
  • 1/4 cup sweetener of choice
  • 1/2 tsp pure vanilla extract optional
  • 1/4 tsp instant coffee optional

Instructions
 

  • Choose your base: heavy cream or full-fat coconut milk. If using coconut milk, refrigerate overnight to separate the cream.
  • In a mixing bowl, pour in the heavy cream or thick coconut cream and beat on medium-high speed until soft peaks form (2-3 minutes).
  • In a separate bowl, whisk together the unsweetened cocoa powder, Dutch cocoa powder, and sweetener. Add instant coffee if using.
  • Gently fold the cocoa mixture into the whipped cream with a spatula, being careful not to deflate the whipped cream.
  • If using vanilla extract, fold it in gently for added flavor.
  • Spoon the mousse into serving dishes and refrigerate for at least 30 minutes to set.

Notes

  • Feel free to experiment with different low-carb sweeteners to suit your taste.
  • Add a pinch of sea salt for a salted chocolate twist.
  • Top with keto-friendly whipped cream or berries for extra flair.
