For the Mint Pesto:

  • 4 cups green kale leaves chopped
  • 1 cup mint leaves
  • ½ cup walnuts
  • 3 cloves large garlic
  • ½ teaspoon salt or to taste
  • ½ cup walnut oil

For the Lamb Patties:

  • 1 pound ground lamb meat
  • 1 tablespoon grapeseed or olive oil for cooking
  • 1 tablespoon unsalted butter for richness
  • 3 pieces hamburger buns
  • 3 slices jack cheese
  • 1 handful spinach or spring green mix for topping

Preparation Steps:

  • Step 1: Prepare the Mint Pesto - Add the kale leaves, mint leaves, walnuts, garlic, and salt into a food processor. Pulse until the mixture is finely chopped.
  • Step 2: Add the Walnut Oil - With the food processor running, slowly drizzle in the walnut oil until the pesto reaches a smooth consistency. Taste and adjust seasoning if necessary.
  • Step 3: Form the Lamb Patties - In a mixing bowl, combine the ground lamb with a pinch of salt and any desired spices. Form the mixture into three equal patties, ensuring they are slightly larger than your hamburger buns as they will shrink while cooking.
  • Step 4: Cook the Lamb Patties - Heat the grapeseed or olive oil in a grill or stovetop pan over medium-high heat. Add the lamb patties and cook for about 4-5 minutes on each side, until they reach your desired doneness. In the last minute of cooking, add a slice of jack cheese on top of each patty and cover to allow it to melt.
  • Step 5: Assemble the Burgers - Lightly toast the hamburger buns if desired. Spread a generous amount of mint pesto on the bottom bun, place the cooked lamb patty on top, and finish with a handful of spinach or spring greens. Cap with the top bun.
