For the Lamb Lollipops:
- 3 racks lamb frenched and cut into chops, trimmed of all but a thin layer of fat
- Coarse sea salt or Kosher salt
- Freshly ground pepper
- 3 cloves garlic minced
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh thyme chopped
- ½ cup olive oil
- 1 lemon cut into wedges
Instructions:
Start by trimming the racks of lamb, ensuring that you remove any excess fat while leaving a thin layer for flavor. Cut the racks into individual chops, creating those beautiful lollipops.
In a mixing bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, and a generous pinch of salt and pepper. This mixture will not only season the lamb but also tenderize it.
Add the lamb chops to the marinade, making sure each piece is well-coated. Cover the bowl with plastic wrap and let the lamb marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for deeper flavor.
Preheat your grill or grill pan over medium-high heat. You want it hot enough to sear the lamb and create those gorgeous grill marks.
