Ingredients
  

For the Lamb Lollipops:

  • 3 racks lamb frenched and cut into chops, trimmed of all but a thin layer of fat
  • Coarse sea salt or Kosher salt
  • Freshly ground pepper
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • ½ cup olive oil
  • 1 lemon cut into wedges

  • Start by trimming the racks of lamb, ensuring that you remove any excess fat while leaving a thin layer for flavor. Cut the racks into individual chops, creating those beautiful lollipops.
  • In a mixing bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, and a generous pinch of salt and pepper. This mixture will not only season the lamb but also tenderize it.
  • Add the lamb chops to the marinade, making sure each piece is well-coated. Cover the bowl with plastic wrap and let the lamb marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for deeper flavor.
  • Preheat your grill or grill pan over medium-high heat. You want it hot enough to sear the lamb and create those gorgeous grill marks.
  • Once the grill is ready, place the marinated lamb chops on the grill. Cook for about 4-5 minutes per side for medium-rare, depending on the thickness of the chops. Use a meat thermometer to ensure a perfect internal temperature of 145°F.
  • Remove the lamb from the grill and let it rest for 5 minutes. This allows the juices to redistribute, ensuring a juicy bite. Serve the Lamb Lollipops on a platter with lemon wedges for squeezing over the top.
