Ingredients
  

  • 1 batch macaroni and cheese prepared as directed and well chilled
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs seasoned if preferred
  • 4 tablespoons olive oil divided

Instructions
 

  • Start by preparing your macaroni and cheese according to the package instructions or your favorite homemade recipe. Once it’s ready, allow it to cool completely and then refrigerate for at least an hour.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  • In one bowl, place the all-purpose flour. In another bowl, beat the two large eggs. Finally, in a third bowl, add the breadcrumbs. You may choose to season the breadcrumbs with your favorite spices for an extra flavor boost.
  • Scoop out a generous tablespoon of the chilled macaroni and cheese mixture. Use your hands to mold it into a ball shape. Repeat this process until all the macaroni and cheese is used up.
  • Roll each macaroni cheese ball in the flour, ensuring it’s coated evenly. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the cheese ball in the breadcrumbs until fully coated.
  • Place each breaded cheese ball onto the prepared baking sheet. Drizzle the olive oil over the top of each ball, ensuring they get that golden color while baking.
  • Bake in the preheated oven for 15-20 minutes or until the cheese balls are golden brown and crispy. Keep an eye on them to prevent burning.
  • Once baked, remove the cheese balls from the oven and let them cool for a few minutes. Serve warm, perhaps with a side of marinara or your favorite dipping sauce.
