- 4 fillets cod 4 to 8 ounces each
- 3 teaspoons avocado oil
- sea salt to taste
- 4 to 6 tablespoons pesto sauce to taste
- 2 tablespoons capers
- 1/2 cup sun-dried tomatoes drained
- 1/2 cup kalamata olives pitted and sliced
- 4 to 5 tablespoons feta cheese to taste
- lemon slices for serving (optional)
Preheat your oven to 400°F (200°C).
Lightly grease your baking dish with cooking spray or avocado oil.
Place the cod fillets in the baking dish, drizzle with avocado oil, and sprinkle with sea salt.
In a mixing bowl, combine the pesto sauce, capers, sun-dried tomatoes, and sliced kalamata olives.
Spread the pesto mixture evenly over each cod fillet.
Crumble feta cheese over the cod fillets.
Bake for about 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
Remove from oven, let rest for a few minutes, serve with lemon slices, and enjoy!
