Ingredients
  

  • 4 fillets cod 4 to 8 ounces each
  • 3 teaspoons avocado oil
  • sea salt to taste
  • 4 to 6 tablespoons pesto sauce to taste
  • 2 tablespoons capers
  • 1/2 cup sun-dried tomatoes drained
  • 1/2 cup kalamata olives pitted and sliced
  • 4 to 5 tablespoons feta cheese to taste
  • lemon slices for serving (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lightly grease your baking dish with cooking spray or avocado oil.
  • Place the cod fillets in the baking dish, drizzle with avocado oil, and sprinkle with sea salt.
  • In a mixing bowl, combine the pesto sauce, capers, sun-dried tomatoes, and sliced kalamata olives.
  • Spread the pesto mixture evenly over each cod fillet.
  • Crumble feta cheese over the cod fillets.
  • Bake for about 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
  • Remove from oven, let rest for a few minutes, serve with lemon slices, and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in an oven at 350°F (175°C) for best results.
  • Experiment with seasonal vegetables for added flavor.
