Ingredients
  

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 bell pepper diced
  • 1 cup cooked chicken breast diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • fresh parsley chopped for garnish

Instructions
 

Prepare the Couscous

  • Start by bringing the vegetable broth to a boil in a medium saucepan. Once boiling, remove from heat and stir in the couscous. Cover the pan and let it sit for about 5 minutes, or until the couscous has absorbed all the broth. Fluff the couscous gently with a fork to separate the grains and set aside to cool slightly.

Chop the Vegetables and Chicken

  • While the couscous is resting, prepare your vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion. Dice the cooked chicken breast into bite-sized pieces. This preparation ensures every bite is packed with texture and flavor.

Make the Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Taste and adjust the seasoning as desired. The lemon juice should provide a bright acidity that balances the richness of the olive oil and the saltiness of the feta.

Combine Everything

  • In a large mixing bowl, combine the fluffed couscous, chopped vegetables, chicken, and crumbled feta cheese. Pour the dressing over the salad and toss gently to ensure everything is evenly coated.

Garnish and Serve

  • Sprinkle freshly chopped parsley over the top for a burst of color and fresh herbal flavor. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld together beautifully.
