Ingredients
  

For the Tostadas:

  • 10 pieces corn tortillas
  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 piece yellow onion chopped
  • 1 clove garlic chopped
  • 1 tablespoon taco seasoning
  • 1 teaspoon kosher salt
  • 16 ounces refried beans (1 can)
  • 1 head iceberg lettuce shaved or finely chopped
  • 1 pint cherry tomatoes halved
  • 1 piece avocado chopped small
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro

Directions:

  • Step 1: Prepare the Tortillas - Preheat your oven to 400°F (200°C). Brush each corn tortilla lightly with olive oil on both sides, then place them on a baking sheet. Bake for about 10-12 minutes, or until the tortillas are golden brown and crisp. Keep an eye on them to prevent burning.
  • Step 2: Cook the Beef - While the tortillas are baking, heat a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes. Then, add the lean ground beef to the skillet. Cook until browned, breaking it apart with a spatula as it cooks. Drain any excess fat.
  • Step 3: Season the Beef - Once the beef is cooked through, stir in the taco seasoning and kosher salt. Mix well to ensure the beef is evenly coated with the spices. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  • Step 4: Heat the Refried Beans - In a small pot, heat the refried beans over low heat until warmed through, stirring occasionally. This will make them easier to spread on the tostadas.
  • Step 5: Assemble the Tostadas - Spread a generous layer of warmed refried beans on each crispy tortilla. Top with the seasoned ground beef, followed by a handful of shaved lettuce, halved cherry tomatoes, and chopped avocado.
  • Step 6: Finish with Cheese and Cilantro - Sprinkle the tostadas with crumbled cotija cheese and fresh cilantro. You can also add any additional toppings you enjoy, such as hot sauce or sour cream.
  • Step 7: Serve and Enjoy - Serve the tostadas immediately while the tortillas are still crispy. Enjoy the explosion of flavors and textures in each delicious bite!
